Ingredients
- 5 c cubed watermelon
- 1c chopped, peeled, seeded cucumber
- 1/2 jalapeño or Fresno pepper, seeded
- 1/4 red onion, chopped
- 1 t kosher salt
- 2 T apple cider vinegar
- OO, for drizzling
- Diced avocado/cooked shrimp for garnish
Preparation
Step 1
In a blender or food processor, combine watermelon, cucumber, onion & chili; process until smooth.
Stir in salt & vinegar. Cover & refrigerate until well chilled. 30 min to 1 hr.
Drizzle each serving w/OO & garnish.
