Ingredients
- 4-8 flour tortillas, 6 in. Size
- 1/4 c green pepper
- 1/4 c red pepper
- 1/2 c onion
- 1/2 c cilantro
- 2 T canola oil
- 12 ozs boneless chicken breasts
- 1/4 t black pepper
- 2 t chili powder
- 1/2 t cumin
- 2 T lemon juice (one lemon)
Preparation
Step 1
Preheat oven to 300. Wrap tortillas in foil; heat in oven for 10 min.
Chop peppers, onions & cilantro. Cut chicken breasts into 1 in strips.
Place oil in nonstick frying pan over med heat; add chicken, seasonings & lemon juice. Cook for 3-5 min.
Add peppers & onion to frying pan; cook for 3-5 min more until chicken is no longer pink & juices run. clear. Add cilantro to chicken mixture.
Divide chicken mixture between tortillas; fold tortillas over.
