Creamy Potato Bake w/ Caramelized Onions

Ingredients

  • 2 T olive oil
  • 2 onions, cut into thin rounds
  • 2 T brown sugar
  • 2 T balsamic vinegar
  • 6 large potatoes, peeled and cut into thin slices
  • 4 x salt and freshly ground black pepper to taste (on each of four layers)
  • 1 pint cream
  • 8 oz parmeson or pecorino shavings

Preparation

Step 1

- Preheat oven to 430. Heat the olive oil in a frying pan and saute the onions over medium heat until soft and glossy. Add the balsamic vinegar and brown sugar and stir-fry for 5 min, or until onions begin to caramelize.
- Arrange a layer of potatoes in a greased, oven-proof dish, season with salt and pepper and arrange a layer of caramelized onions on top. Repeat the layers with the remaining potatoes and onions, ending with a layer of potato slices. Pour the cream over and sprinkle with cheese shavings. Bake fo 35-40 min or until golden brown and cooked.
