Microwave Meatloaf

Ingredients
- 1 lb. lean Ground Beef
- 1 Egg, beaten
- 6 Ritz reduced fat crackers, crushed
- 1 small Onion
- 1 Tbls. Parsley, minced
- 3/4 tsp. Garlic Salt
- 1/4 tsp. Pepper
- 1/2 Cup Green Pepper, chopped
- 1/4 Celery, chopped
- 8 Oz. Tomato Sauce, divided
- 1 Tbls. Mustard
- 1 Tbls. Brown Sugar

Step 1
In a 1-1/2 at. glass utility dish, toss together all ingredients except 4 ozs. tomato sauce, mustard and brown sugar, mixing lightly and thoroughly. Spoon mixture evenly into baking dish. Do not pack.
Cook, uncovered 6 minutes in microwave.
Mix the rest of the tomato sauce, mustard, and brown sugar together. Pour over top of partially cooked meatloaf. Cook another 6-7 minutes.
