Ingredients

  • For Topping:
  • 4 fresh roma tomatoes
  • 3 to 4 Tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • For Each Bowl:
  • 1 cup warm, cooked grits
  • 1 oz breakfast meat of choice, cooked and warm
  • 1 oz cheese (pimiento is recommended)
  • 1 egg, cooked as desired
  • 1 or 2 halves of roasted tomato

Preparation

Step 1

1. Preheat oven to 300°F.

2. Cut 4 fresh roma tomatoes in half and remove seeds. Toss in olive oil, salt, and pepper. Place on a baking pan and bake 1 1/2 hours.

3. For each serving, place 1 cup warm, cooked grits in a deep bowl. Top with 1 oz breakfast meat of choice, cooked and warm; 1 oz cheese (pimiento is recommended); 1 egg, cooked as desired; and 1 or 2 halves of roasted tomato.
