Roasted sweet potatoes are like home fries but with a tinge of sweetness and earthy spice. Chef Eugene Fritzler says the trick is to pull them from the oven only when they are fully caramelized, but not charred.

  • 4 sweet potatoes
  • 2 Tbsp vegetable oil, plus extra for baking dish
  • A pinch of nutmeg
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar
  • 2 tsp cinnamon
  • Salt

Preparation

Step 1

1. Preheat oven to 350°F.

2. Peel and dice sweet potatoes into 3/4-inch squares. Toss in 2 Tbsp vegetable oil, nutmeg, and vanilla extract. Mix together brown sugar and cinnamon and add to sweet potatoes, tossing again to coat them.

3. Spread the sweet potatoes on a lightly oiled baking dish. Bake 15 minutes, toss sweet potatoes, then bake 15 minutes more. Toss again and bake for 10 more minutes, removing them from oven before they char. Salt to taste.
