Ingredients

  • 2 - 3 bonelss, skinless chicken breasts
  • 2 stalks celery
  • 1/4 C fresh chopped cilantro, chopped
  • 1/2 C mayonnaise (recipe calls for 1 C, but I use less)
  • 1 tsp curry powder
  • 1/2 mdium onion, finely chopped
  • 2 cloves garlic, minced
  • chicken breasts can be substituted for roasted chicken or dark meat if desired

Preparation

Step 1

1. If using chicken breasts make sure to cook chicken thoroughly before making the salad. Cool completely.

2. Dice celery into 1/3 inch pieces.

3. Wash and chop cilantro.

4. Mince the garlic and chop the onion.

5. Stir the curry powder, cilantro, onion and garlic into the mayonaisse, mixing well.

6. Cut chicken into chunks.

7. Add mayonnaise mixture to the chicken and stir completely.
