Ingredients
- 1 Tbsp. olive oil
- 4 boneless, skinless chicken breats, cut into bite size pieces
- 1 small onion finely chopped
- 2 cloves minced garlic
- 1 red pepper chopped
- 2 cups chicken broth
- salt and pepper to taste
- seasoned salt to taste
- 1/4 tsp. oregano, basil and thyme
- 1/3 cup rice, couscous or quinoa

Step 1
saute chicken pieces in oil until light golden, remove and set aside. stir in onion, red pepper and garlic, saute about 2 minutes. stir in broth, scrape up the bottom of pan, add chicken along with rice. reduce heat to low, simmer 15-20 minutes, until broth is absorbed.
serve hot
