BROCCOLI CRANBERRY SALAD

Generally use Truvia rather than sugar and a canola type mayo to reduce the calories, but my family doesn't know it.

Ingredients

  • Ingredients For Dressing:
  • 2 heads broccoli, cut into small florets
  • 2/3 cup dried cranberries (sometimes called craisins) or
  • raisins
  • 1/2 lb crisp, drained bacon, crumbled
  • 1/2 cup chopped red onion
  • 1/2 cup chopped walnuts or 1/4 cup sunflower seeds or
  • 1/4 cup pine nuts (I use toasted pine nuts)
  • 1 cup cheddar or montery jack cheese, shredded
  • ( I don’t use any cheese)
  • 1/4 cup sugar substitute
  • 1 cup mayo (preferably low fat)
  • 2 tbs apple cider vinegar (I use raspberry vinegar)
  • Salt/Pepper to taste

Preparation

Step 1

Mix salad ingredients in large bowl; stir together dressing ingredients and gently fold into salad.
