Ingredients

  • 3 lbs. chicken parts
  • 300 g. corn chips
  • 1 can enchilada sauce
  • 1 can mushroom soup
  • 1-1/2 cups chopped onion
  • 1/2 tsp. garlic salt
  • 1 cup grated cheese
  • 1 cup reserved chicken broth

Preparation

Step 1

1. Place chicken into a large saucepan. Cover with water. Bring to a boil, covered. Cook about 45 minutes until tender. Reserve 1 cup of broth. When cool enough to handle remove skin and bones. Cut chicken into bite size pieces.

2. Scatter 1/2 of the corn chips in a 9"x9" pan. Combine next four ingredients in bowl. Add chicken, stir well. Spoon over corn chips in pan. Sprinkle with cheese, then remaining corn chips. Pour chicken broth over all.

3. Bake uncovered in a 350F oven for 45 to 60 minutes.
