Ingredients
- 1/2 bell pepper
- 1 onion
- 2 garlic cloves
- 2 cups chopped tomatoes
- 1 8 ounce can tomato sauce
- 2 tablespoons chili powder
- 2 teaspoons cumin
- 1/2-1 teaspoon hot red pepper
- flakes
- 1/2 teaspoon salt
- 4 medium carrots
- 2 medium zucchini
- 1 cup whole kernel corn
- 1 16 ounce can kidney beans
- drained
Preparation
Step 1
1. Heat oil- add onion, bell pepper
and garlic 5 minutes
2. Add tomatoes, tomato sauce,chili
powder, cumin, pepper flakes
and simmer 20 minutes.
3. Add carrots, zucchini and corn.
Simmer 15 minutes
4. Add beans and simmer 5 minutes.
