VitaClay Slow Cooker Carol's Baked Beans

Homemade baked beans are easy to make in a VitaClay slow cooker. Adjust the seasonings and spices based on your families preference. They stay warm for hours in the pot.

Ingredients

  • 2 cups navy beans
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup barbecue sauce
  • 1/4 cup molasses
  • 1/2 teaspoon salt
  • 1/4 teaspoon dry mustard
  • 1 drop Worcestershire sauce
  • 1 1/2 teaspoons corn starch
  • 1 cups cold water
  • 1/2 pound of bacon
  • 1 small onion, sliced thin

Preparation

Step 1

In the morning, put the beans in a large pot and fill with water. Bring the beans to a boil, discard the water and bring to a boil for a second time, again discard the water. Cook until the beans reach the desired softness, they will not soften in the VitaClay pot.

Mix the remaining ingredients (except onion and bacon) in a sauce pan and bring to a boil, boil until thick.

Line the bottom of the clay pot with some of the bacon, mix the sauce, onion and beans together, then add to the clay pot. Top with remaining bacon.

Note: If you'd like, you can soak the navy beans overnight in water, instead of double boiling them before starting.

Select 'slow cook', 'soup' - 2 hours

After the two hours is up the pot will switch to the 'keep warm' feature which is about 156 degrees. Allow it to remain in the 'keep warm' for about 4 or 5 hours.
