Marinated Artichoke & Rice Salad

Maybe the PERFECT pot-luck dish ... it can be served hot, cold or room temperature! Everyone seems to love this and it's not something that other people usually bring ...

Ingredients

• 1 package chicken flavored rice mix (like Rice-a-Roni)
• 2 green onions, thinly sliced
• 1/2 green bell pepper, small diced
• 8 pimento-stuffed olives, thinly sliced
• 2 6-oz. jars marinated artichokes (cut into pieces)
• 1/4 tsp. curry powder (DON'T leave it out! No one will know it has curry!)
• 1/3 c. mayonnaise

Preparation

Step 1

Cook rice as directed on package. Mix everything else into it, while the rice is still hot .......
