Ingredients

  • 3 T flour
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1/8 tsp salt
  • 1/2 lb sea scallops
  • 2 T olive oil
  • 1 clove garlic, minced
  • 1 tsp cornstarch
  • 1/2 tsp sugar
  • 1/2 tsp dried oregano
  • 1/8 tsp red pepper
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 3 T chopped fresh parsley, divided (leave 1 1/2 tsp for garnish)
  • 2 c cooked rotini, hot

Step 1

Combine flour thru salt in a ziplock bag; seal and shake well. Add scallops to bag; shake to coat.

Heat oil in large skillet over medium heat. Add scallops and garlic and cook 3 minutes on each side on until scallops are done. Set aside.

Combine cornstarch thru tomatoes in skillet; stir with wire wisk until blended. Bring to a boil; cook 1 minute of until thickened stirring constantly. Remove from heat and stir in parsley.

Combine tomato mixture and pasta; top with scallops. Sprinkle with remaining parsley.
