gingerbread cake

classic cake, only needs a dusting of icing sugar or dollop of whipped cream or applesauce. wonderful aroma

Ingredients
- Butter and flour 9-inch metal baking dish and line with parchment paper
- 1 +1/2 cups all-purpose flour
- 1 cup whole wheat flour
- 2 tsp. cinnamon
- 2 tsp. ground ginger
- 3/4 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. allspice or cloves
- 1/4 tsp. nutmeg
- 1/2 cup packed brown sugar
- 1 egg
- 3/4 cup fancy molasses
- 1/3 cup butter-melted
- 1 tsp. vanilla
- 1 cup buttermilk or soured milk
- (to sour milk, measure 1 Tbsp. lemon juice or vinegar into a measuring cup and pour in milk to 1 cup,let stand 5 minutes and stir)

Step 1
Preheat oven to 350F
in a large bowl, sift together flours and spices. in another bowl, whisk together sugar, egg, molasses, butter and vanilla, blend well. add milk and whisk together. pour over dry ingredients and stir until moistened. pour batter into baking dish. bake for 45-55 minutes or until cake tester comes out clean. let cool slightly in pan on a rack. serve warm with icing sugar to dust or whipped cream or applesauce on the side.
can be stored for 2 days at room temp.
