Slow Cooker Verde Chicken

This chicken makes a great filling for tacos or burritos or is perfect on its own with a side of rice and beans (try cilantro rice!).
I have made this several times. It is super easy and really good. We like to serve it in a soft tortilla wrap with black beans, tomatoes, sour cream, and guacamole. Double, triple, or quadruple recipe.

Ingredients
- 1, 16 oz. jar salsa verde (green salsa, made with tomatillos)
- 2 lb. chicken thighs, boneless and skinless (use twice as much chicken otherwise it is too soupy)

Step 1
Combine chicken and salsa in a slow cooker. Cover and cook on low for 6-8 hours. Shred chicken with two forks before serving.
