Ingredients
- 1/2 pound blue cheese
- 2 pounds ground beef
- 1/4 cup minced green onions, including tops
- 1/4 teaspoon Tabasco sauce
- 1/2 teaspoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red peeper (a little less if you don't like the red-hot "blues")
- 8 hamburger buns

Preparation
Step 1
Crumble the blue cheese into the ground beef, add the minced onions, Tabasco, Worcestershire, salt and peppers. Mix lightly to blend. Store in refrigerator for an hour or two, to allow flavors to blend. Gently press the meat into eight patties. Broil, pan-fry or grill over moderate coals to the desired degree of doneness. Serve on toasted hamburger buns.
