Balsamic Cherry and Goat Cheese Crostini

Ingredients

  • 1 baguette
  • Olive oil
  • Salt and pepper
  • 1 lb dark sweet cherries, pitted and chopped
  • 1 TBS honey
  • 1 tsp balsamic vinegar
  • 2 tsp chopped fresh thyme
  • 8 oz creamy goat cheese
  • 1/4 cup toasted pecan pieces
  • Zest of a lemon

Step 1

Preheat oven to 350. Cut baguette into 1/2 inch diagonal slices and place on a sheet pan. Brush lightly with olive oil and sprinkle with salt and pepper. Bake for about 10 minutes until lightly browned and crisp.

In a saucepan over medium-low heat, combine the cherries, honey, balsamic vinegar, 1 tsp thyme and a pinch of salt, and cook for 5 minutes, stirring occasionally. Remove from heat and let cool.

To assemble, spread a layer of goat cheese on each baguette slice and top with a spoonful of cherries. Sprinkle with pecans, remaining thyme and lemon zest. Serve immediately.
