  • 2 cups all-purpose flour
  • 3 tbsp sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup flaked coconut
  • 1/2 cup unsalted butter
  • 3/4 cup coconut milk

Preparation

Step 1

1. Preheat oven to 450°F. Grease baking sheet. Cut butter into small pieces.

2. In large mixing bowl, combine flour, sugar, baking powder and salt. Stir in coconut.

3. With pastry blender or two knives, cut in butter until mixture is crumb like, with butter pieces smaller than peas.

4. Pour in coconut milk. Using wooden spoon, lightly stir ingredients just until combined, being careful not to over mix.

5. Pat dough into 8-inch circle on prepared baking sheet. Cut into 8 wedges; Separate wedges slightly.

6. Bake until biscuits are light golden brown, 13-15 minutes. Remove to wire rack to cool slightly before serving.
