Ingredients

  • 3 lbs bottom round roast, cut into 1/2 inch cubes
  • Salt & pepper
  • 1/4 cup canola oil
  • 2 large onions, diced
  • 4 cloves garlic, minced
  • 1 tbsp cumin
  • 1 tbsp dried oregano
  • 3 tbsp chili powder
  • 2 tbsp brown sugar
  • 1 (28 oz) can diced tomatoes
  • 1 (15 oz) can black beans
  • 1 (4 oz) can chopped green chilis
  • 3 jalapeno peppers, seeded and chopped

Preparation

Step 1

Heat oil in large saute pan over high heat. Season beef with salt and pepper then brown the beef cubes in the oil on all sides. Transfer beef to slow cooker.

Add onions and garlic to the pan and cook until softened. Transfer to slow cooker. Stir in spices, sugar, tomatoes, beans, green chilis and jalapenos. Cover and cook on low 3 1/2 - 4 hours.
