Tart lemon filling over a brown sugar shortbread crust with a browned butter icing

Ingredients

  • Crust:
  • 1 cup Flour
  • 1/2 cup Butter, softened
  • 1/4 cup Brown Sugar
  • Filling:
  • 2 Eggs
  • 1/2 cup Lemon Juice
  • Rind of 2 Lemons
  • 1 cup Sugar
  • 1 tsp Baking Powder
  • 3 tbsp Flour
  • Icing:
  • 1-1/2 cup Powdered Sugar
  • 1 tsp Vanilla
  • 2 tbsp Butter, browned
  • 1 tbsp Milk

Preparation

Step 1

Crust:
Cut the butter into the flour and brown sugar until well blended. Pour into 8x8 baking pan and gently pat down until even.

Bake in 350 degree oven for 12 to 15 minutes, until lightly browned.

Filling:
In a bowl, mix the sugar, lemon rind, baking powder and flour and toss until well blended.

In a small bowl, lightly beat eggs and add lemon juice. Pour over the dry ingredients and stir until blended.

Pour filling mixture over the browned crust and bake for 25 minutes.

Let cool for about 30 minutes.

Icing:
In small sauce pan, add butter and cook to light brown over low heat. Cool for a few minutes. Add vanilla and milk and stir well. Add powdered sugar and beat with a wire whisk until smooth. Pour over lemon bars and let cool completely. Cut into desired squares.

I keep unused portions in the refrigerator or freezer.
