  • 1 cup pine nuts
  • 4 cup fresh basil leaves
  • 2 cloves garlic, crushed
  • 1 cup grated Parmesan Cheese
  • 1 cup plus 4 tablespoons extra-virgin olive oil, divided
  • 4 to 6 (4-ounce) freezer containers

Step 1

Puree pine nuts, basil and garlic in a food processor until smooth. Add Parmesan cheese and process until blended. Add 1 cup olive oil in a slow, steady stream.

Pour pesto into jars leaving 1/2 inch at the top. Drizzle 1 tablespoon olive oil on top of each container of pesto.

Cover and freeze for up to one year.

Optional: Toast pine nuts in 450°F oven until lightly browned to give the pesto a deeper flavor.
