Ingredients
- 4 TBS canola oil
- 2 cups chopped onion
- 1 tsp brown sugar
- 8 cloves chopped garlic
- 1 TBS ground cumin
- 2 cups water
- 4 (15 oz) can black beans
- 1 TBS white wine vinegar
- Kosher salt to taste
- Black pepper to taste
Preparation
Step 1
Heat oil over medium heat. Add onion; cook 5 minutes or until tender, stirring occasionally. Stir in sugar, garlic, black pepper, cumin. Cook 1 minute, stirring occasionally. Stir in water and beans, bring to boil. Partially cover, reduce heat, and simmer 30 minutes or until thick, stirring frequently. Remove from heat and stir in vinegar. Serve with shredded mozzarella and chopped cilantro on top.
Serving size = 1/3 cup; this recipe makes enough to fill 24 arepas
