Ingredients

  • 1 lb bulk Italian Sausage or ground round
  • 2/3 cup chopped onion
  • 1/2 cup chopped red pepper
  • 1/3 cup green chili pepper
  • 2 tbsp minced garlic
  • 2 fresh jalapeno peppers
  • 3 cups chicken broth
  • 2 cups cubed red potatoes
  • 1/2 cup chopped carrots
  • 2 cans of Mexican corn, 15oz each
  • 2 cups half & half or light cream
  • 2 cups cooked and drained tortellini
  • 2 tbsp flour
  • 1 tsp cumin
  • salt, pepper, red pepper to taste

Preparation

Step 1

Brown sausage, pepper, garlic and onion together.

Add potatoes, carrots, seasonings and broth. Cook until potatoes are firm, but a little tender. Thicken with flour.

Add the remaining ingredients, but do not boil.

You can add more of the spicy ingredients to “kick it up a notch”.
