Citrus Yogurt Cake

Ingredients
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup Greek yogurt
- 1 1/3 cups sugar
- 3 eggs
- 2 tsp lime zest (1-2 limes)
- 1/2 tsp pure vanilla extract
- 1/2 cup vegetable oil

Step 1
Preheat oven to 350 degrees. Spray a loaf pan with baking spray & set aside.
In a small bowl, sift together flour, bak. powder & salt. In another bowl, whisk rest of ingredients.
Slowly whisk dry ingredients into wet ones.
With a rubber spatula,fold the oil into the batter until well-incorporated. Pour batter into pan & bake about 50 minutes. Allow cake to cool in pan 10 minutes, then carefully place on a baking rack to cool.
