Ingredients

  • Cedar plank, soaked in water for 1 hour
  • 2 small wheels of Brie cheese (5-6 oz)
  • brown sugar
  • 1/4 cup white wine
  • 2/3 cup strawberry jam
  • raspberries
  • blackberries
  • thyme leaves
  • almonds
  • baguette

Preparation

Step 1

Soak the cedar plank in cold water for a minimum of 1 hour.

Preheat grill to medium heat, about 400*F.

Remove plank from water. Place wheels of Brie on plank, evenly spaced.
Then coat each wheel lightly with brown sugar.

In a small bowl mix white wine and strawberry jam. Whisk together. Divide over a bowl with raspberries and a bowl with blackberries. Then place each fruit topping on the two separate cheese wheels. Sprinkle with thyme leaves then sprinkle whole almonds around on the cedar board (or sliced almonds directly on top)


Place plank on grill and close lid. Plank cheese for 20-25 minutes, until cheese is golden brown and slightly puffy, topping is hot and almonds are light golden brown.

Remove plank from grill and allow to cool for 1-2 minutes.

Serve immediately with fresh sliced baguette, a few big spoons, and lots of napkins!

Other options to top cheese are grilled mushrooms, fruit salsa, and tomato bruschetta.
