Asian Chicken and Herb Salad

Ingredients
- 1/3 cup fresh lime juice
- 1/4 cup fish sauce
- 1/4 cup sugar
- 1 red jalapeno, thinly sliced
- 1 clove garlic, minced
- 8 ounces pad Thai rice noodles, cooked and rinsed under cold water
- 2 cups shredded rotisserie chicken
- 1/2 cup fresh basil
- 1/2 cup fresh mint
- 1/2 cup fresh cilantro leaves
- 2 scallions, thinly sliced on an angle
- 1/4 cup dry-roasted peanuts
