Polenta with Sausage

Ingredients
- 4 1/2 cups tomato pasta sauce (See Classic Tomato Sauce recipe)
- 4 cups water
- 1 1/2 tsp salt
- 1 1/2 cups yellow cornmeal
- 1 lb bulk Italian sausage
- 1 small onion, thinly sliced
- 1/2 cup freshly grated or shredded Parmesan cheese

Step 1
1. Make classic tomato sauce
2. Heat water and salt to boiling in 3-qt saucepan. Gradually add cornmeal, stirring constantly with spoon or wire whisk to prevent clumping.
3. Reduce heat to low. Cook uncovered about 30 minutes, stirring frequently, until mixture is very thick and smooth.
4. Spread in ungreased square baking dish (9x9). Cover to keep warm.
5. Cook sausage and onion in 10-inch nonstick skillet over medium-high heat, stirring frequently, until sausage is no longer pink. Drain.
6. Stir in sauce. Heat to boiling; reduce heat. Simmer uncovered about 20 minutes, stirring occassionally, until slightly thickened.
7. Cut polenta into 8 pieces. Spoon sausage mixture over polenta. Sprinkle with cheese.
