Ingredients
- 2 c. red beans
- 7 c. water
- 2 tbs bacon drippings
- 1/2 lb smoked sausage cut into small pieces
- 2 onions, chopped
- 2 cloves garlic, minced
- 1 gr. bell pepper, chopped
- 2 stalks celery, chopped
- 1 tbs creole seasoning
Preparation
Step 1
Wash and sort beans. In saucepan, combine beans and water. Boil 2 minutes.
Heat bacon drippings in skillet and add sausage and brown slowly. Add onions, peppers, celery and garlic and sauté until tender.
Combine all ingredients, including the bean water, in slow cooker. Cover and cook on low 6 to 8 hours. If desired, during the last 20 minutes of cooking, stir frequently and mash lightly with spoon.
Serve over hot rice.
