To enjoy this soup hot simply replace cold water with hot water. Can be stored for 3 days in the fridge in an airtight container. Enjoy!

Ingredients
- 1 1/2 cup water
- 1 1/2 cups tomatoes, small cubes
- 1 1/4 cups carrots, small cubes
- 1 tablespoon fresh coriander, leaves and stems
- 1 tablespoon lemon juice
- 1/2 cup cashews
- 1 1/2 teaspoons sea salt
- 1 teaspoon chili powder
Preparation
Step 1
In the blender, reduce all ingredients and half of the water to a thick, smooth paste.
Add the remaining water and mix to obtain a creamy soup.
To enjoy this soup hot simply replace cold water with hot water.
Can be stored for 3 days in the fridge in an airtight container.
