Hash Brown Pizzas

Quick and easy breakfast pizza is made with refrigerated hash browns. Change up the toppings to your personal preference!

Ingredients

  • FOR EACH PIZZA
  • 1 cup refrigerated shredded has brown potatoes (like Simple Potatoes)
  • 1 tablespoon olive oil
  • 2 eggs
  • 2 tablespoons Cheddar cheese
  • 1 tablespoon red bell pepper, chopped
  • 2 mushrooms, sliced
  • 1 slice ham, diced
  • Or use any other topping you want.

Preparation

Step 1

Preheat oven to 425°F.

Cover a baking sheet with aluminum foil or parchment paper and spray well with cooking spray. For each pizza, toss 1 cup refrigerated shredded has brown potatoes with 1 tablespoon olive oil. Shape into a flat circle about 6 inches wide, to form pizza crust. Bake 20 minutes, or until edges begin to brown.

Meanwhile, scramble 2 eggs per pizza, season with salt and pepper and remove from heat just before eggs are set.

Top the browned pizza crust with scrambled eggs, diced red bell pepper, chopped mushrooms, diced ham and shredded cheddar cheese. Bake 5 minutes or until cheese is melted.
