Huevos Rancheros Casserole

I bought the chorizo from Caputo's deli, it's a lot less greasy
Ingredients
- 10-12 corn tortillas
- 3 c. sharp cheddar or pepper jack, finely shredded
- 1 lb chorizo, cooked
- 2 - 4 oz cans chopped green chilies
- 12 eggs
- 1 c. milk
- 1 tsp oregano
- 1/2 tsp ground red pepper
- salsa, pico de gallo, sour cream and fresh avocado

Step 1
Spray casserole pan with cooking spray. Line bottom and up sides with corn tortillas and cut 2 tortillas into strips to put on top. Arrange 1 cup cheese over tortillas. Top with cooked chorizo, chiles and 1 cup cheese. Arrange tortilla strips over cheese. In med bowl, combine eggs, milk, oregano and red pepper, beat well and pour into dish. Sprinkle remaining cheese and press lightly into egg mixture. Cover with foil and refrigerate for 8 hours or overnight. Bake covered for 30 minutes at 350 - uncover and bake an additional 20-30 minutes. Let stand for 5 minutes before serving. Top with salsa, pico, sour cream and avocado.
