- 1 lb Yukon gold potatoes
- olive oil
- salt & pepper

Step 1
1. Preheat oven to 475. Medium dice the potatoes.
2. Place the potatoes on a sheet pan. Drizzle with olive oil and season with salt & pepper. Toss thoroughly to coat. Arrange in a single, even layer.
3. Roast, stirring halfway through, 24-26 minutes, or until lightly browned and tender when pierced with a fork.
4. Remove from oven and transfer to a serving dish.
