Zucchini with Herbs and Garlic

Ingredients

  • 2 tbs extra-virgin olive oil
  • 3 medium zucchini, sliced 1/4-inch thick
  • 2 scallions, chopped
  • 1 tsp crushed garlic
  • 2/3 c. chicken broth
  • 2 tbs Garlic and Herb Sauce Mix (recommended: Knorr)
  • 2 tbs finely chopped flat-leaf parsley
  • Salt & pepper

Preparation

Step 1

In a large skillet heat oil. Add zucchini, scallions, and garlic. Saute for until zucchini is tender, about 5 minutes.

Slowly pour in broth. Stir in sauce mix and parsley. Simmer for 2 minutes. Season, to taste, with salt and pepper.
