Ingredients

  • 2 lbs ground chuck
  • 1/4 medium onion, chopped (the recipe called for 1 onion, but it was too much)
  • 1/2 c minced fresh cilantro
  • 1 oz taco seasoning mix
  • 1/4 c tomato sauce
  • 1 large egg
  • 1 c crushed tortilla chips

Preparation

Step 1

Preheat oven to 350 degrees. Line a rimmed baking sheet with aluminum foil.

In a large bowl, combine ground chuck, onion, cilantro and taco seasoning mix. Add tomato sauce and egg, stirring to combine.

Using hands, work in crushed tortilla chips until mixture is combined. Shape into a 10-inch loaf on prepared baking sheet.

Bake for 45 minutes to 1 hour, or until meatloaf is cooked through.

Let stand for 10 minutes before slicing.
