Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 tespoon freshly ground black pepper
  • 1/4 tespoon salt
  • 1/3 cup shredded Gruyere or Swiss cheese
  • 2 tablespoons reduced fat cream cheese
  • 1/4 cup dry whole whest breadcrumbs
  • 1 tablespoon chopped fresh parsley or thyme
  • 4 tespoons extra virgin olive oil
  • 1/4 cup chopped ham

Preparation

Step 1

1. Preheat oven to 400 degrees.
2. Sprinkle chicken with 1/4 tespoon pepper and salt. Combine cheese and cream cheese in a bowl. Combine the remaining 1/4 tespoon pepper with breadcrumbs, parsley and 2 teaspoons oil in another bowl.
3. Heat remaining 2 teaspoons oil in a large ovenproof non-stick skillet over medium heat. Cook the chicken until browned on both sides, about 2 minutes per side. Move chicken to the center so that all the pieces are touching. Spread with the cheese mixture, sprinkle with the ham, then top with the breadcrumb mixture.
4. Bake about 5-7 minutes, or until an instant read thermometer reads 165 degrees.
