Mango Avocado Salad

This is a light and refreshing spin on the chicken salad. This recipe can also use chicken in place of the mango or just adding in to all the ingredients.

Ingredients

  • 1 Mango
  • 1 1/2 Avocado (RIPE)
  • 1 small Red Onion
  • 1 Jalapeno (to taste)
  • Cilantro (to taste) I love cilantro so I use a lot.

Preparation

Step 1

Chop and mash the avocado. Use a food processor to chop the onion and mango separately, mix in the avocado. Dice the jalapeño and cilantro and add both to taste. Serve on bread or as a light dip with pita chips.
