I found this recipe in a Good Housekeeping article about a White House Chef. This is my husband's favorite cookie.

Ingredients

  • 1 1/2 cup (3 sticks) margarine
  • 1 cup sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp. grated lemon rind (I use dried)
  • 1/2 tsp vanilla
  • 3 1/3 cup finely ground almonds
  • 3 1/3 cup all purpose flour
  • 1 tsp baking powder
  • 1 1/4 tsp cinnamon
  • 1 jar (12oz) raspberry jam
  • 10 X powdered sugar

Step 1

1. Beat butter & sugar in large bowl with mixer until light & fluffy.

2. Beat in egg, egg yolk, lemon rind & vanilla.

3. Stir in flour, baking powder & cinnamon. Chill several hours or overnight.

4. Cut dough in half. Roll out between wax paper.

5. Cut 1/2 dough with biscuit cutter, 1/2 with doughnut cutter. Cut an equal number.

6. Put on ungreased cookie sheet.

7. Bake at 350 degrees for 12 minutes or until edges are golden.

8. Remove from oven & let stand 1 minute. Remove from sheet & cool.

9. Heat jam. Spread solid cookies with jam. Top with cut out cookie.

10. Sprinkle tops with powdered sugar. Spoon dab of jam in opening of each cookie.
