Step 1
Preheat oven to 200.
Use one or two 4-5 lb beef tenderloins, trimmed of fat. (Figure 1/2 lb per person.)
Place tenderloins on cookie sheet and roast at 200 until meat thermometer registers 145-150. It will take approximately 3-4 hours, regardless of whether you are using one or two fillets.
Remove tenderloins from oven and cover with foil. It can sit for a few hours and will be a perfect pick and cut like butter. It can be served at room temperature.
