Cornmeal Scrapple

1 cup cornmeal
1 cup milk
1 tsp sugar
1 tsp salt
2 3/4 cups boiling water
1/2 pound pork sausage -- cooked and drained
all-purpose flour
2 tab butter or margarine

Combine cornmeal, milk, sugar, and salt. Gradually stir into boiling water; cook and stir till thickened and bubbly. Cook
covered, over low heat about 10 minutes. Crumble sausage finely; add to cornmeal mixture. Pour into loaf pan. Cover and
chill. To serve, cut scrapple into 1/3 inch thick slices; dip in flour. Fry slowly in butter or margarine for 15 to 20 minutes
or till lightly browned, turning once. Serve with butter or margarine and maple syrup, if desired.

Creamy Tuna Mushroom Casserole

Mushrooms, fresh or canned
3 ½ cups or 2 cans chicken broth 13 ¾ oz each
¼ cup all purpose flour
1 (12 oz.) can solid white tuna
Parsely
2 cups frozen peas
1 lb. Medium sized pasta shells, freshly cooked and drained.

Mix broth and flour to combine. Bring boil and reduce heat and simmer 3 minutes. Add mushrooms and simmer uncovered. Drain tuna, add with coarsely chopped parsely. Add peas, Toss with pasta.

SEASONED SALT


Makes 1/2 cup

Seasoned salt adds flavor and texture without the high sodium content of salt alone. It will keep indefinitely in an airtight container at room temperature.




1/4 cup coarse or sea salt
2 tablespoons freshly ground black pepper
2 tablespoons dried dill
2 tablespoons roughly ground fennel seeds

1. Combine all ingredients in a small bowl. Store seasoned salt in an airtight container.
