Festive Kale Salad "Oh She Glows"

Ingredients

  • Dressing:
  • 2 medium de-stemmed kale, chopped fine
  • 1/4-1/2 cup dried cranberries (for garnish)
  • 1 cup pecan halves, toasted
  • 1 1/2 tbsp nutritional yeast
  • 1 tbsp olive oil
  • 2 pinches sea salt
  • 2 garlic cloves
  • 1/4 c fresh lemon
  • 2-4 tbsp olive oil
  • 1/4 tsp sea salt
  • 1/4 tsp pepper

Preparation

Step 1

Blend dressing ingredients in mini processer until smooth, addd to chopped kale, let sit 30-60 minutes.
Chop and blend pecans, nutritional yeast olive oil and sea salt in processor, while still crunchy, not into a powder. Mix in with salad after it has sat with dressing for 30-60 minutes. top with cranberries for garnish and serve.
