Fancy Egg Scramble
This recipe is from "Wake up and Smell the Coffee" Pacific Northwest Edition by Laura Zahn.
This recipe can be made the night before and reheated in the morning.

Ingredients
- Cheese Sauce:
- 1 cup Canadian Bacon, diced
- 1/4 cup Green Onions, chopped
- 3 tbsp Butter
- 12 Eggs, beaten
- 1 3-ounce can Mushroom pieces, drained
- 4 tbsp Butter, melted
- 2-1/2 cups Soft Bread Crumbs
- 1/8 teaspoon Paprika
- 2 tbsp Butter, melted
- 2 tbsp Flour
- 1/2 tsp Salt
- 1/8 tsp Pepper
- 2 cups Milk
- 1 cup Cheddar Cheese, grated
Preparation
Step 1
First, make the Cheese Sauce:
In a large saucepan, melt butter and blend in flour, salt and pepper. Whisk in milk, stirring until bubbly. Stir in cheese until melted. Set aside.
In a large skillet, cook bacon and onion in 3 tbsp butter until onion is tender, but not brown.
Add eggs and scramble just until set.
Fold eggs and mushrooms into Cheese Sauce.
Turn the mixture into a greased 7x12-inch baking dish.
Combine 4 tablespoons melted butter, bread crumbs and paprika. Sprinkle over egg mixture.
Cover and chill at least 30 minutes or overnight.
Bake in a 350 degree oven for 30 minutes, uncovered.
