South of the Border Quiche

This recipe is from "Wake up and Smell the Coffee" Pacific Northwest Edition by Laura Zahn.

This dish is good served with fresh fruit and a corn muffin.

Ingredients

  • 8 Eggs
  • 1/4 cup Flour
  • 1 tsp Baking Powder
  • 2 cups Monterey Jack Cheese, grated
  • 1/2 cup Cottage Cheese
  • 1/4 cup Butter, melted
  • 1 4-ounce can Green Chili Peppers, diced
  • Sour Cream
  • Salsa

Preparation

Step 1

Beat the eggs. Add flour and baking powder.

Fold in cheeses. Mix well.

Stir in melted butter and green chilies.

Pour the mixture into a greased quiche pan, or pie plate.

Bake in a 350 degree oven for 35 minutes.

Cool for about 10 minutes.

Serve wedges with a dollop of sour cream and salsa.
