Ingredients
- 1 lb. Roma tomatos, chopped
- 1 Cucumber, sliced and quartered
- 1/2 med. red onion, sliced
- 2 avocados, diced
- 2 Tbsp. virgin olive oil
- juice of 1 lemon (about 2 Tbsp.)
- 1/4 c. cilantro, chopped
- 1 tsp. sea salt
- 1/8 tsp. pepper
Preparation
Step 1
Place chopped tomatos, sliced cucumbers, sliced red onion, diced avocado and chopped cilantro into a large bowl.
Drizzle with olive oil and lemon juice. Toss gently to combine. Just before serving, toss with salt and pepper.
