- 5 Tbsp. cornstarch
- 1 1/2 cups whole milk
- 2 egg yolks
- 1/4 cup sugar
- 3 Tbsp. unsweetened cocoa
- 1 Tbsp. unsalted butter

Step 1
In a small bowl combine cornstarch, l/2 cup milk and egg yolks; mix until well blended. Strain; set aside. In small saucepan combine remaining 1 cup milk, sugar, cocoa and butter; bring to a boil over medium heat. Boil 1 1/2 minutes. Stir a small amount hot mixture into yolk mixture to warm. Gradually whisk warmed yolk mixture into hot milk mixture. Continue cooking, stirring constantly until mixture thickens and comes to a boil. Remove from heat. Place plastic wrap over surface to prevent skin from forming. Cool. Refrigerate if not using immediately.
