Blackberry Cobbler

This is a super easy cobbler recipe. You can use any type of berry. This recipe doubles very easily.

Ingredients
- Topping:
- 2 tbsp Cornstarch
- 2 tbsp Lemon Juice
- 1 tbsp Sugar
- 1/4 cup Water
- 4 cups Fresh Blackberries
- 1 cup Flour
- 1 cup Sugar
- 1 tsp Baking Powder
- 1 Egg
- 1/2 tsp Salt
- 1 tbsp Butter, melted
Preparation
Step 1
In a saucepan, combine cornstarch, lemon juice, sugar and water. Cook over low heat, stirring until thick.
Fold in berries until well coated.
Pour into a greased 1-1/2 quart casserole or 6 ramekins or individual casserole dishes.
For topping:
Combine all ingredients, except butter, stirring until mixture is crumbly.
Sprinkle crumbly mixture over the berries. Drizzle melted butter on top.
Bake in 375 degree oven for 25 minutes.
Serve hot. Very good topped with vanilla or cinnamon ice or whipped cream.
