Maryellen's Magic Muffins

This recipe is from "Wake up and Smell the Coffee" Pacific Northwest Edition by Laura Zahn.

This are called "magic" because they have high fiber and low fat ingredients.

Very good with a nutty top!

Ingredients

  • 1 cup Orange Juice
  • 1 Orange, Grated
  • 1/4 cup Canola Oil
  • 1/2 cup Honey
  • 1 Egg
  • 1-1/2 cups Whole Wheat Pastry Flour
  • 1/2 cup Oat Bran
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 1 cup Ripe Banana, mashed
  • 1/2 cup Nutty Granola

Preparation

Step 1

Combine juice, rind, oil, honey and egg in a large bowl.

In a separate bowl, mix flour, oat bran, baking powder, salt and cinnamon.

Add dry ingredients and mashed banana alternately to the liquid mixture.
Divide batter between 12 lined or greased muffin tins.

Sprinkle granola on top of each muffin.

Bake in 375 degree oven for 25-30 minutes.
