Peach Kuchen
This recipe is from "Wake up and Smell the Coffee" Pacific Northwest Edition by Laura Zahn. It is filled with breakfast and brunch recipes from Bed and Breakfast Inns.
This is really good served warm with breakfast or brunch.

Ingredients
- 1 16-ounce can Peach Halves
- 1-1/2 cups Flour
- 1/2 cup Sugar
- 2 tsp Baking Powder
- 1 tsp Orange Peel, grated
- 1/2 tsp Salt
- 2 Eggs, beaten
- 1/4 cup Butter, melted
Preparation
Step 1
Dream peaches, saving 2 tablespoons of the "juice"
Combine flour, sugar, baking powder, orange peel and salt.
In a separate bowl, beat eggs and combine wit the reserved peach juice and melted butter.
Pour egg mixture into the dry ingredients and blend, but don't over mix.
Spread better in the bottom of a greased 8-1/2 inch spring-form pan or tart pan with a removable sides/bottom.
Mix the topping ingredients. Sprinkle the mixture over peach halves.
Bake in a 400 degree oven for 25 minutes.
Cool 10 minutes before serving. Place pan on a serving plate, then remove the sides.
