Strawberry Bread
This recipe is from "Wake up and Smell the Coffee" Pacific Northwest Edition by Laura Zahn.
I was asked for this recipe many times. A moist strawberry bread with a strawberry cream cheese spread.

Ingredients
- Cream Cheese Spread:
- 3 cups Flour
- 2 cups Sugar
- 1 tsp Baking Soda
- 1 tsp Salt
- 1 tbsp Lemon Peel, grated
- 3 Eggs, beaten
- 1-1/4 cups Vegetable Oil
- 2 cups Fresh Strawberries, cut into chunks
- 6 ounces Cream Cheese, fat-free is fine
- 2 tbsp Strawberry Jam
Preparation
Step 1
In a large bowl, mix the flour, sugar, soda, salt and lemon peel.
In a separate bowl, beat eggs. Stir in oil.
Stir egg mixture into dry ingredients until moist.
Fold in berries. Batter should not be too thick. If it appears thick, add a little more oil or juice from berries.
Pour batter into two greased loaf pans three-quarters full.
Bake in 350 degree oven for up to 55 minutes.
Remove from the oven and cool. Loosen with a knife to remove from pans. Serve cool with Strawberry Cream Cheese spread.
For Strawberry Cream Cheese; soften the cream cheese and mix with jam. Chill until ready to serve.
