Meat Loaf (Jenny)

Ingredients

  • 2 large eggs
  • 1 tsp dry mustard
  • 1/2 cup milk
  • 4 slices firm textured bread finely crumbled
  • 2 1/2 lb ground beef
  • 1 large onion, minced
  • 1/2 cup minced celery
  • 1/4 cup chopped parsley
  • Glaze
  • 2 Tbs brown sugar
  • 1/2 tsp dry mustard
  • 1/2 cup ketchup

Preparation

Step 1

Preheat oven to 350 degrees. Line roasting pan with aluminum foil. Set Aside.

In large bowl whisk egg with 1 tsp mustard, 3/4 tsp salt and 1/4 tsp pepper until blended. Stir in milk and bread crumbs. Let stand 5 minutes. Add ground beef, onion, celery and parsley with hands. Mix lightly until well blended. Shape. Put into pan and bake 1 hour 45 minutes.

Take out and put on glaze and cook another 15 minutes.
